Alpujarra Cured Hams

Our hams are cured in dryers in Trevélez, which are located at more than 1,600 meters above sea level, which provides the ham with a dry and cool climate, with pure air, ideal for curing.

The altitude and the climate are key factors in giving the ham its flavor and texture, achieving a unique aroma and enhancing all the nuances of the product to achieve its maximum expressiveness.

Casa de Soto Hams are known for their lean and tasty meat, and for their high content of marbled fat or intramuscular fat, which gives the ham its characteristic flavor and texture.

Trevélez Ham is a rounded ham, keeping the rind and leg. It is medium and medium large in size, with a slightly pale red color due to the absence of nitric salts. These pieces of ham are famous for their shine when cut and with fat partially infiltrated into the muscle mass. The fat is unctuous, shiny and white in colour.

The authentic ham I.G.P. de Trevélez is aromatic and has a soft and light flavor. Juicy and little salty.
